Ikejime is the Japanese technique for dispatching fish quickly and humanely. After the spike and the bleed, running the wire through the nerve canal severs the spinal cord completely. HOW TO USE IT

1. Spike the brain and bleed the fish first.
2. Find the nerve canal: a very small hole just above the main spine, near the tail.
3. Run the wire through the canal to fully sever the spinal cord.
4. Drop the fish straight into ice water to chill it fast.
