Ikejime is the Japanese technique for dispatching fish quickly and humanely: spike the brain, bleed the fish, run the wire through the nerve canal, then chill it on ice. Each step has to happen fast, and that only works when the right tool is within reach.

THE IKEJIME PROCESS

1. Spike. Hit the brain, between the eye and the gill plate.
2. Bleed. Cut the major blood vessels near the gills and the tail.
3. Wire. Run the wire through the nerve canal, just above the spine near the tail.
4. Chill. Straight into ice water.

The result: fish with better texture, better flavor and a longer shelf life, ready for sashimi and sushi.
